According to this expert, parboiling and freezing your roasties today could save you a good 25 minutes prepping them on Christmas day, leaving them extra-specially crunchy when the time comes to serve them out.
When making your dreamy roast potatoes you should start off by first peeling and chopping your potatoes, parboiling them for around five to 10 minutes before draining and returning them to the pan.
To make sure the potatoes are nice and rough around the edges, you should then give the pan a hearty shape, helping to ensure that crispy texture we all know and love.
The majority of recipes that follow these steps take approximately 25 minutes to complete, adding up to a fair chunk of present opening and Prosecco tasting time. Therefore, you can simply make in advance, freezing your potatoes once they’re cool enough.
Then, all you have to do on the day the whack out your frozen potatoes on December 25th – with no need to defrost – and add them to a tray of hot duck fat, goose fat, olive oil, or whatever you roast your potatoes in.
You can then pop these in a fan oven at 200°C for 40 – 50 minutes until golden and crispy, while you get on with playing an extra round of Charades.
